I don't know that anybody will be able to give you a good answer here, except a restaurant equipment installer. I've hooked up the electrical on these before, and it's basically just a fan circuit, with a light fed off the same circuit. I also piped in the micro switch for the fire suppression system, but that's as far as I could go. You've got, most likely, 3 different contractors: mechanical, electrical and fire protection. It will also be much easier to install it if there was an existing hood previously. If it's new, it'll have to have proper support, which would add several hours to the mechanical job. The vent duct may be rather time-consuming as well. Either way, my best guess would be at least $5 thousand total labor and materials, plus the price of the hood.
