If you are loading a 560 enough to make it noisy, there is a good chance that (2) 560 cards in SLI would be twice as noisy. The problem with SLI and Crossfire (currently) is that it takes a lot of overhead power and resources just to implement it. Consequently, you only get about a 25% performance increase, if both cards are heavily loaded. To get the result you are looking for, you'd need a minimum of three cards running in SLI. But I'm not advising you to do that. The "gotcha" is that you'd have to somehow limit the cards to whatever frame rates a single card can produce. That's the key. Unless the multiple cards are doing the same amount of work (as 1 card)...you aren't going to get less of a load on any card. Then there's the TDP factor to consider. The inside of your case is going to be warmer with multiple cards, which will cause all cooling fans (including the ones on the video cards) to spin up faster, sooner. Overall, I think it's not worth it to try.
