A direct replacement would be great but I’m willing to build a circuit board to get the job done. How can I go about doing this and what parts are needed? I'm having trouble most of all with what relay could i use and or how i can turn a normal relay into a switched (Latching) relay.

We always use relays to latch themselves. I like automotive relays because they can take a punch but they only have 1 contact. I would use two relays and have the start switch in parrallel with the second relay contact. Then you need to remove power to switch off or have a normally closed stop switch in series in the circuit. Rather use a latching switch. That is what I do with automotive relays.
