The type of pressure sensor you require here is more correctly called a "pressure switch". A pressure switch, is a switch that is operated by pressure (not by hand, like the light switch in your house). Most pressure switches have an adjustable set-point (the pressure at which the switch operates) usually by winding a nut against a spring on the pressure switch body. Some pressure switches have a fixed set-point and you buy the switch pre set with the required pressure set-point for your task. A pressure relief valve in a hydraulic system works by "bypassing" hydraulic oil from the outlet of the pump directly back to the oil tank. If the pump pressure becomes too high the relief valve opens to allow some oil flow through itself, which allows the oil to escape back to the low pressure side. so, to operate the electrically operated relief at 200bar you must provide power to it when the pressure reaches 200bar. This is where the pressure switch comes in. Connect the power source (ie battery) through the pressure switch to the relief valve. When pressure is less than 200Bar the relief is closed, when pressure exceeds 200bar the relief opens. hope this helps..
